Apple Bread with Pecans and a Sweet Apple Glaze

An apple a day keeps the doctor away. Does it still count if it’s in sweet bread? If so, I’ve got you covered.

Along with pumpkin, apples are another popular Fall fruit to cook and bake with. Specifically in dessert recipes. I’ve only ever made homemade apple pie; I’ve never really tried to incorporate apples into any other type of dessert or bread. The only type of bread I’ve made like this was banana nut and it never lasts long in my house.

This apple bread is super soft on the inside and the pecans give it the right amount of crunch. The glaze is not overly sweet and compliments the bread. The bread is delicious enough to enjoy without the glaze as well.

Apple Cinnamon Pecan Bread with an Apple Glaze

Equipment

  • 1 stand mixer
  • 1 9×5 inch loaf pan
  • parchment paper
  • 1 grater for grating apples

Ingredients
  

  • 2 Cups all-purpose flour
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup unsalted butter softened
  • 1 cup dark brown sugar
  • 1/2 cup buttermilk or regular milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 medium apples 1 Honeycrisp and 1 Granny Smith I used a cosmic crisp and a granny smith
  • 1/2 cup pecans or walnuts optional

Instructions
 

Bread batter

  • Preheat oven to 350℉
  • Line a 9 x 5-inch loaf pan with parchment paper
  • Combine flour, cinnamon, salt, baking soda, baking powder and nutmeg in a large bowl. Whisk together. Set aside.
  • Cream butter and sugar in a stand mixer for about 2 minutes.
  • Add eggs and vanilla. Mix for 1 minute.
  • Gradually add the flour mixture to the butter mixture, alternating with the milk.
  • Add grated apple and nuts (if adding). Mix until just combined.
  • Pour batter in parchment lined loaf pan and spread evenly. Once you reach the top level batter out.
  • Bake for 55-60 minutes or until a toothpick is nearly clean.
  • Let it sit for 10 minutes, then transfer to a wire rack to cool down.
    While the bread is cooling, make the glaze.

Apple Glaze

  • Combine all of the ingredients in a bowl and whisk until everything is well combined.
    Using a spoon, add glaze on top of the warm bread. Let the glaze settle.
  • Enjoy!

Notes

*When adding glaze, you can place the bread on a wire rack with parchment paper underneath. It will prevent the glaze from puddling up around the bread. 
You can omit nuts from the recipe. 
You can use any apples you want. 
I used buttermilk for a softer texture, you can substitute with regular milk. 
The apples can be chopped into small pieces or grated.
