Equipment
- 1 large baking pan
- 1 small cookie scoop or 2 TBS measuring spoon
- 1 pastry brush
Ingredients
- 500 g all-purpose flour
- 200 g granulated sugar
- 2 small eggs
- 250 g unsalted butter
- 20 g instant yeast
- 1/3 cup milk
- pinch of salt
- jam of choice
Varnish
- 1/2 stick of butter softened
- fine sugar
Instructions
- Preheat oven to 370 °FCombine butter and sugar and mix until there's a smooth texture. Once well integrated, add eggs. Add milk, a little at time until combined. Gradually add flour, yeast and salt. With scooper or spoon, scoop equal pieces. Roll into a ball, gently press. Should look like a dome. Place on parchment lined baking sheet. Bake for 20 minutes, until golden. Let them cool a little before adding jam. If you add jam while cookie is too hot, it will melt the jam. Add about 1 tsp jam to center of bottom cookie and add the top part, gently press down. Butter entire cookie and roll in fine sugar.
